Apple Topped Pork Chops

2 tablespoons olive oil
5 crushed garlic cloves
4-6 thin-cut lean boneless pork chops
5 small red apples, cored and diced (keep skin on) (1/2 inch cubes)
8 teaspoons of balsamic vinegar
4 tablespoons of bourbon
*whole grain mustard optional


  1. Combine oil and garlic in a skillet over medium heat.  Place the pork chops in the center of the pan (if you have a small pan or you are doing 6 you may need to cook 3 chops and a second batch).  Cook approx. 6 minutes on one side.

  2. In a bowl toss the apple cubes with balsamic and bourbon and let sit.

  3. Turn the pork chops add the apples and cook for another 6 minutes on the other side.  Turn again for another 3 minutes or so to cook the pork through and soften the apples.

  4. Pork should be slightly pink. Serve and top with whole grain mustard.
